I've got a scale over there. [ She points to it. ] I found it for a different class, but I made sure to clean everything properly! When you're baking, a lot of recipes will be okay if you estimate, but weight is always more accurate than volume. Think about flour, for example. If you take half a cup of flour, it's going to be a very different amount if you press it down versus if you set it loose. Weight will be the same no matter what the volume is. So if you do it with weight, you guarantee that it comes out the absolute best it can every time you make it!
